Pumpkin Pie Bites
This Pumpkin Pie Bites is the perfect Fall weather dessert!
Ingredients
15 oz (1 can) of pumpkin puree
12 oz (1 can) of evaporated milk
3/4 cup of sugar — we used sugar cane sugar
1/4 cup of whole wheat flour, if needed
1 tsp of cinnamon
1/4 tsp of cloves, ground
1/2 tsp ground ginger
2 large eggs
pie crust
whipped cream, if desired
avocado oil spray, for muffin tin

Directions
In a bowl, mix the dry ingredients: sugar, ground cloves, cinnamon and ground ginger.
While mixing, add the eggs and pumpkin puree.
Add the evaporated milk and continue mixing.
To achieve a bit thicker consistency, add flour.
Preheat oven to 350°F (180°C).
Using a mason jar lid, cut circles out of the pie crust.
Using a cupcake or muffin tin, spray avocado oil and press each pie crust.
Fill each crust with the mixture.
Bake for 30 minutes or until the top is golden brown.
Add whipped cream with a pinch of cinnamon, as desired.
