Zucchini Chowder
Hello Friends, I want to share my current favorite Pinterest recipe; credit to littlebroken.com. The first time I made an attempt to make this recipe, I did try to follow her instructions, but my food processor failed me. So, I decided to use half & half and heavy cream. I also added yellow squash in replace for the potatoes I didn't have that time (fail). I continue to try different things - my excuse for always missing at least one or two ingredients - and this is current the best one so far.
Ingredients:
Carrots, Potatoes, Celery, Zucchini, 1 Pint of half & Half, 1 Pint of Heavy Cream, Onions, Garlic, Butter, Dried Thyme, Rosemary, Dried Bay Leaf, Sweet Corn, and Bacon (optional).
Directions:
If you're like me who doesn't eat pork, skip this step. Heat 1 tablespoon of butter in a pan. Add bacon until cooked or crisp depending to your liking. Drain the oil and put on the side.
Heat 1 tablespoon of butter in a sauce pot. Add garlic until it soften, then add onions until it looks transparent. Add potatoes, carrots, dried bay leaf, half & half and heavy cream; raising the heat to medium high until it begins to simmer for the vegetables to soften. I usually add potatoes and carrots first they take longer to soften and I do not want the zucchini and celery to be overcooked.
Add zucchini, celery, corn, rosemary and dried thyme until the zucchini and celery softens. Let it simmer for 5-10 minutes.
Add Bacon (optional) and garnish with parsley &/or fresh rosemary.
Serve!
